Dill (Anethum graveolens)
Ancient Romans believed dill had fortifying qualities. Gladiators were given food covered with dill, to give them strength. To grow: Dill tends to grow quickly and not last very long, so you may have to plant more dill every 2 to 3 weeks throughout the spring and summer. Grows to 3 to 4 feet. It can overtake a garden, as it seeds easily. As a seasoning: Dill is best known for its use in making pickles, but it can be used in sauces and salads, as well. It's good on fish and potatoes. Dried, it loses its scent, so fresh is best. Add dill (plus parsley, chives and garlic) to yogurt to make a low-fat dip or topping. |
