Preparation:
In food processor bowl with metal blade, process bread until crumbs form. measure and reserve 1/4 cup crumbs; discard any remaining bread. Place shrimp in processor bowl; process until smooth.
In small bowl, combine shrimp, reserved 1/4 cup bread crubms, bell pepper, salt, ground red pepper, lemon juice and egg white; mix well.
Spray medium nonstick skillet with nonstick cooking spray. Drop shirmp mixture into skillet, forming 4 oval patties, 1/2 inch thick. Cook over medium heat for 8 to 10 minutes or until browned on both sides, gently turning once. Serve shrimp cakes with cocktail sauce. |
