Preparation:
Heat the oil in a skillet and saute the onion and garlic for 1 minute. Add the squashes and bell pepper. Saute 3 to 4 more minutes. Stir in the reserved tomato juice, tomato paste, water, salt and pepper. Simmer until the vegetables are tender. Stir in the tomatoes and basil and simmer 20 more minutes. Prepare the pasta and serve the sauce over it. |
