combine pork and potatoes-mix well pass through a grinder or pulse in small batches with a food processor add salt, pepper, sage, thyme, nutmeg, and chives-mix well shape into 3-inch patties heat oil in a skillet, over a medium to moderate flame add sausage patties in small batches and brown very well on all sides drain briefly on a rack and blot with paper towels serve hot |
