Preparation:
Put lentils in a 4 quart saucepan. Wash thoroughly. Cover the lentils with about 4 inches of water and bring to a boil. Cook for approximately 1/2 an hour. Add all ingredients but the tomatoes, cheese and sausage.
Remove the sausage from the casing. Brown the meat in a frying pan. Add the sausage to the lentils along with a spoon or two of the drippings. Cook for one hour. Add the tomatoes and cheese and cook for another half hour. |
