1 cup flour
1/4 teaspoon salt
1 Cup corn oil
 

Preparation:

COMBINE EGGS AND MILK-MIX WELL ADD FLOUR AND SALT, STIR TO MAKE A BATTER HEAT OIL TO 375 DEGREES DIP EGGPLANT IN BATTER, ALLOWING EXCESS TO DRIP OFF ADD EGGPLANT FINGERS TO HOT OIL AND FRY UNTIL GOLDEN ON ALL SIDES DRAIN ON A COOLING RACK AND BLOT WITH PAPER TOWELS SERVE HOT OR WARM
