Preparation:
Saute onion and garlic in butter until onion is tender; blend in flour.
Combine
with
beans, ham, carrots, 1 c. water, wine, mustard, thyme and allspice, plus
salt to
taste. Place in greased 5-cup baking dish. Bake at 350 F for 1 hour or until
most of the liquid is absorbed. Add Buttered Bread Crumbs during the last
15
minutes. Let stand for 10 to 15 minutes before serving. Buttered Bread
Crumbs: Saute bread crumbs in 1 Tbsp. butter until crumbs are crisp and
golden brown. Makes about 3/4 c. NOTE: 2 cans cooked alrge lima beans
may be substituted for the cooked dry beans. |
