Cracked Black Pepper Fettuccine

Ingredients:

12 ounces cracked black pepper fettuccine
2 tablespoons olive oil
2 tablespoons butter
3/4 cup sliced mushrooms
3/4 cup julienned zucchini
1/4 cup minced scallions
3/4 cup chicken broth
1 1/2 teaspoons garlic
1 1/2 tablespoons chopped fresh parsley
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 cup grated parmesan cheese
 

Preparation:

Cook pasta according to package directions. Meanwhile, heat olive oil and butter in large skillet. Saute' mushrooms, zucchini and scallions 4 minutes. Add chicken broth and garlic; simmer 2 minutes. Season with parsley, salt and pepper. Add hot fettuccine and toss well with all ingredients. Sprinkle with Parmesan cheese and serve. Makes 4 dinner servings busted by Judy
