Preparation:
For the mushrooms, use mixed varieties. Shitakes are terrific in this dish with sliced white mushrooms. Saute garlic in olive oil briefly. Add mushrooms and cook until tender-crisp. Add rice and saute until rice is coated with oil. Turn heat to medium-high. Add sherry and water bring to boil turn heat to low and simmer for 45 min. Toss with peppers before serving. Makes 4 servings.
