Preparation:

Blend wild rice with mushrooms; add salt to taste. Set aside. Prepare vegetables, cut zucchini into slices or sticks, remove flowerettes from broccoli and cauliflower (reserve remainder for another use such as for puree). Slice, julianne or shred the carrots.
Arrange broccoli and cauliflower around outside edge of round glass or other microwave-proof platter. Make an inner circle of carrots, then zucchini slices. Fill center with a mound of wild rice and mushrooms.
Drizzle with butter and sprinkle with green onion, tarragon and salt. Cover with plastic wrap. Refrigerate until ready to cook. Microwave on HIGH for 10 to 12 minutes until vegetables are tender crisp.
An excellent one-dish accompaniment for broiled or barbecued meat or fish, or makes an excellent vegetarian main dish. |
