Preparation:
1. In a large bowl, combine the chicken, apples, pears and red cabbage. In
another bowl, mix the yogurt, mayonnaise and mustard, pour over the chicken
mixture, and toss. Season with salt and pepper. Cover and chill for at
least 1 hour.
2. Separate the lettuce into 6 leafy cups and divide the chicken mixture
among the lettuce cups. Top with a sprinkling of chopped nuts and a dash of
paprika. Serve cold. |
