Preparation:
Heat oil in heavy medium saucepan over medium-high heat. Add onion and garlic and saute 3 minutes. Stir in apricots, cranberries, salt and cinnamon. Add water and bring to a boil. Remove from heat. Add couscous. Cover and let stand until water is absorbed, about 10 minutes. Fluff couscous with fork. Refrigerate until cool. Whisk orange juice and oil in small bowl until well blended. Pour over couscous mixture. Add pistachios and parley and stir to blend. Season to taste with salt and pepper.
