Preparation:
In a small bowl, whisk together lime juice, honey, shallot, salt and cayenne. Whisk in oil; cover and refrigerate. Slice cantaloupe and papaya in half, remove seeds and peel. Cut cantaloupe into 1" cubes. Slice papaya into 1/2-inch thick strips. Peel kiwifruits, cut in half lengthwise, and slice crosswise into 1/4-inch thick pieces. In a large bowl, combine fruits and zest; cover and refrigerate 2 hours. Pour dressing over fruit and stir gently. Divide among chilled salad plates and serve immediately. |
