Preparation:
Cook pasta acording to package directions.
Place 2 tablespoons olive oil in large skillet. Over medium-low heat, sauté
onions, peppers and garlic 10 minutes or until onions turn translucent. Add
cilantro and mushrooms; cook until mushrooms are soft (about 3 minutes). Add
tomatoes, salt and pepper and 1 tablespoon olive oil; cook 2 more minutes.
Add
olives and pasta; gently mix until warm. Place in large pasta bowl, top with
cheeses and pine nuts. |
