Preparation:
Saute ham in pan in melted butter. Arrange apricots and pineapple chunks around ham slices. Reduce heat to simmer. In a bowl mix together apricot jam, maple syrup, orange juice, orange peel, parsley and sherry. Baste ham slices and fruit with liquid as ham cooks. Cook about 4 minutes on each side. Serve hot.
