Honey Mustard Pork Scallopini

Ingredients:

4 chops boneless pork chops -- trimmed
2 tablespoons honey
2 tablespoons spicy mustard
1/3 cup crushed butter flavoured crackers
1/3 cup dry bread crumbs
1 tablespoon vegetable oil
1 tablespoon butter
 

Preparation:

1. Flatten pork to 1/8 inch thickness.

2. Combine honey and mustard; brush over both sides of pork.

3. In a shallow bowl combine crackers and bread crumbs; add pork and turn to coat.

4. In a skillet heat oil and butter; fry pork for 2-3 minutes per side or until crisp and juices run clear.
