Red Cooked Pork

Ingredients:

4 cups water
1 cup soy sauce
2 tablespoons sugar
1/4 cup white wine
2 pieces star anise
3 slices fresh ginger root
1 tablespoon szechuan peppercorn
2 medium scallions
6 pounds boneless pork loin
 

Preparation:

combine soy, stock or water, sugar, wine, and sachet in a saucepot, over a moderate flame heat to a boil add the pork return to a boil, reduce heat, and simmer until pork is tender serve hot or allow to cool in the cooking liquid and serve at room temperature
