Preparation:
Mix together eggs, cheddar cheese, jack cheese, cottage cheese, cayenne and flour, peppers and baking powder. Whisk until well blended. Pour into glass baking dish. Cook in microwave, uncovered, on 70% power, until set. Turn dish if eggs appear to be cooking unevenly. Cook about 15 minutes. Let sit for about 5 minutes. Cut into squares to serve.
