Preparation:
Melt yeast in warm milk. Sift flour with cocoa and add milk. Beat egg yolks
with sugar and salt and add to flour, as well as butter and grated lemon
rind. Knead for 15/20 minutes. Let leaven in a warm place for 30 minutes.
Knead again. Add raisins (soaked in warm water, squeezed and floured) and
candied fruits (diced), and knead well.
Grease and flour a baking pan shaped like a dove, spread the dough in and
let leaven again till doubled.
Preheat oven at 200°C.
Beat egg yolks and spread over the dough, sprinkle with granulated sugar and
almonds. Bake for 15 minutes. Low heat to 180°C and continue baking for
35/40 minutes. Let cool completely. Heat white chocolate and draw the eye
and the beak of the dove. Serve. |
