Creole Sauce

Ingredients:

1 teaspoon creole seasoning
1/4 cup unsalted butter
1 cup tomato concasse
3/4 cup onion
3/4 cup celery
3/4 cup green or red bell pepper
1 teaspoon garlic
1 cup chicken stock
1 cup tomato sauce
1 teaspoon sugar
1/2 teaspoon liquid hot pepper sauce
 

Preparation:

heat butter in a saucepan, over a medium flame add tomato concasse, onions, celery, bell peppers, and garlic stir in seasoning mixture heat and stir for 5-6 minutes, until onions have softened add stock, tomato sauce, and sugar-mix well add pepper sauce to taste simmer for 20-30 minutes, over a low flame serve warm
