Preparation:
Combine flour, 1/2 cup of the sugar, baking powder, and salt in a mixing bowl. Add half and half, butter, 1 beaten egg, and 1 teaspoon of the vanilla extract. Spoon batter evenly into a greased 9x9-inch baking pan. Sprinkle blueberries over batter.
Combine the remaining beaten eggs, Ricotta cheese, the remaining 1/2 cup sugar, cornstarch, and the remaining 1/2 teaspoon vanilla in a mixing bowl until blended. Spoon evenly over blueberries. Bake in preheated 350 degree oven for 55 to 60 minutes or until knife inserted in center comes out clean. Cool. Cut into squares. |
