Preparation:
Dice several potatoes (can use reconstituted ones from cans) Chop one
or two onions Chop or shred cheese
(proportion is probably 5-6 potatoes to one
onion and 1/2-1 c. cheese)
Fry the potatoes really well (I try to use mostly olive oil now, but
usually add some butter, too) Add onions part way through as they'll
burn easily. When well browned, can add some water and cover for a bit
to soften potatoes. Then sprinkle with paprika and pepper, and toss
cheese into mix and cover for a bit to let cheese soften. Can also add
other veggies to stretch this or add fiber, also can add cooked meats to
