Preparation:
Scrub potatoes and pat dry. Prick skin with a fork in several places. Arrange in a single layer on an ungreased baking sheet Bake at 425'F for 50 minutes or until potatoes are tender.
Cut an X in the center top of each. Gently squeeze and remove most of the potato from skin, keeping skin intact. Mash potatoes with a fork. In saucepan cook onion and green pepper in butter until tender. Add milk and heat. Blend into mashed potatos with garlic, salt and pepper. Blend in 1/2 cup of cheese. Spoon into potato shells. Top with remaining cheese. Bake 10 minutes until golden. Prep Time: 20 minutes Cook Time: 50 minutes
I only use 1 Tablespoon butter if I use milk, but I prefer low fat yogurt or sour cream (1/2 cup) in place of milk and butt |
