Mom Dworkin's Potato Latkes

Ingredients:

3 medium raw potaoes -- grated
1 medium Onion -- grated
1 dash baking powder
1 dash salt
2 tablespoons flour
2 large eggs -- beaten
 

Preparation:

This is the way my mother made "Potato Latkes" (Of course, there were no measurements!): Grate raw potatoes and onion together. (We used one of the old, old, heavy- duty, metal grinders). Add a dash of baking powder and salt. Stir. Add some flour. Stir. Add beaten eggs. (Guide: For 3 cups of potato, use 2 tbsp. flour and 2 eggs). Fry spoonfuls of mixture in hot oil until golden on both sides. Drain on a paper towels. Serve warm with applesauce (my favorite), jam or sugar.
