Preparation:
heat olive oil and bacon fat in a saucepot, over a low flame add onions, garlic, thyme, and scallions cover and heat for 10 minutes remove from heat, set aside arrange a layer of sliced potatoes in the bottom of a buttered baking pan
season lightly with salt and pepper spread a thin layer of the onion mixture on top of the potatoes continue to build layers, finishing with a layer of potatoes combine butter and breadcrumbs-mix well spread on top of potatoes bake @ 425 degrees until well browned serve hot |
