Preparation:
Coat potatoes all over with olive oil, prick with a fork bake @ 400 degrees for 45 minutes remove from oven and cool fry bacon until crisp, drain well cut bacon into 1/2-inch pieces saute scallions in 1 tablespoon oil for 2 minutes cut potatoes in half lengthwise, leaving 1/4-inch of shell remove pulp to a bowl add butter and mash until smooth add milk, bacon, and scallions-mix well sprinkle potato skins with grated cheese spoon filling into shells broil 4-inches from heat for 5 minutes, to brown tops serve hot |
