Preparation:
In small saucepan sprinkle gelatin over water; let stand until softened, about 1 minute. Stir over low heat until gelatin is dissolved; cool slightly. In blender combine milk, alba and gelatin mixture. Cover; process on low, adding ice cubes one at a time. Process on high until mixture starts to thicken. Transfer to bowl; blend in whipped topping. spoon into 4 (1/2cup) round molds. Chill several hours until set. Unmold; garnish with coconut, whipped topping and mint. Makes 4 (78 calorie) servings. |
