Texas Meat Skillet

Ingredients:

2 cups ground meat mix
1/2 cup water
14 1/2 ounces crushed tomatoes
1 can dark red kidney beans -- undrained
1 cup long-grain rice -- cooked
1/2 cup bell peppers -- chopped
2 teaspoons chili powder
1/2 teaspoon salt
1/2 cup fat-free cheddar cheese -- grated
1 cup low-fat tortilla chips -- crushed
 

Preparation:

In a skillet, combine ground meat mix, and water. Cover and cook over low heat for 15 minutes. Break up meat with a fork. Stir in crushed tomatoes, kidney beans, rice, bell peppers, chili powder, and salt. Bring mixture to boiling; reduce heat. Cover and simmer for 20 minutes, stirring occasionally. Sprinkle cheese and tortilla chips over meat mixture. Serving Ideas : Serving Ideas: Serve immediately.
