Preparation:
Combine all of the above ingredients using a fork to mix (yes, a fork :)) until batter is thin. You will need to make these in a 6 inch skillet. Put a little oil in the skillet, or spray with a nonstick vegetable coating. Drop a scant 1/4 to 1/2 cup batter in pan and swirl to form a crepe. I use a gravy ladle. The first one never turns out, so don't get discouraged. Cook on one side and then flip over and let other side of crepe cook . Repeat with remaining batter til all batter is used. Mix cottage cheese with the 2 Tbsps. sugar and use as filling for blintzes. You may want to add additional sugar for the filling. Sprinkle top of the blintzes with additional sugar.
Note: I make these and fill with a scoop of ice cream then freeze them. Before serving, warm up some hot fudge sauce and pour over frozen crepes. Fairly easy, elegant desser |
