Preparation:
Heat oven to 350 degrees. In a medium saucepan heat oil; saute onion and garlic over low heat until soft. Do not brown. Add tomato sauce, water and oregano. Stir; let simmer 5 minutes. In a small bowl beat together eggs, ricotta and salt. On bottom of a lightly greased 12 x 8 x 2 inch baking dish spread a thin layer of sauce. Arrange a layer of noodles slightly overlapping. Spread half of the ricotta mixture evenly over noodles; spoon on some sauce. Scatter 1/3 of the mozzarella and sprinkling of parmesan over all. Repeat layers. Finish with noodles, some sauce and remaining cheese. Cover tightly with foil and bake 30 minutes. Uncover; bake 10 minutes more. Let settle 15 minutes before serving. Serve remaining sauce on side. |
