Ingredients:

sweet peppers -- green, red,or yellow, cut into narrow strips |

onion -- peeled,sliced, and separated into rings |

orange roughy fish fillets -- cut in 4 serve pieces |

watkins vegetarian vegetable soup base |

teaspoon |
watkins lemon pepper -- to taste |

Preparation:
Heat grapeseed oil in skillet. Add pepper strips and onions; top with fish fillets. Sprinkle soup base evenly over top. Add watkins lemon pepper to tast. Cover and cook over low heat 12 minutes. Uncover and continue cooking until fish is done (flakes easily when touched with fork). Makes 4 servings.
