Avocado Soup 2

Ingredients:

2 medium avocados
2 cups chicken stock
1/2 cup cream
1 tablespoons lemon -- juice of
1 teaspoon paprika
1 teaspoon curry powder
1 teaspoon salt and pepper
 

Preparation:

Avocados a.k.a. avocado pears are used for making soups, salads, and desserts. One of the biggest food surprises I experienced in Africa involved avocados. I visited a family as they were sitting down to a large bowl of mashed avocado. I was eager to join them as it was the first avocados of the season. When I took my first big spoonful my taste buds were shocked by the taste of sugar. They had mashed the avocados with sugar and were eating it as a dessert. I was expecting something completely different. Mash together the avocado flesh, lemon juice, cream and curry powder. Season to taste. Blend with the stock and bring to a boil. Pour into bowls and garnish with paprika.
