Ingredients:

Preparation:
Saute onion, garlic and bell pepper in olive oil and sherry/apple juice till soft. Add tomatoes and veg. broth and bring to a boil. Simmer 7 minutes. Add orzo and simmer another 10 minutes. Stir in basil before serving. Makes 4 servings.
My notes: I made this over my lunch break and stuck it in the refrigerator so I could just reheat it for dinner. The orzo soaked up *a lot* of the liquid so I added another cup of veg. broth before reheating. I served it with a green salad. |
