Preparation:
Preheat oven to 375 F. Grease and flour 2 baking pans. In a large bowl, combine the sugar, oil, and carrot juice. Add the eggs and mix well. In another bowl, sift together the flour, baking powder, baking soda, cinnamon, and salt. Add the dry ingredients to the wet ingredients, stirring in the carrots. Pour into the prepared pans and bake for about 45 minutes, or until an inserted straw or toothpick withdraws cleanly. Allow the cake to cool before icing.
