Preparation:
Preheat the oven to 350 degrees. Combine the bran cereal and coffee in a large mixing bowl. Set aside. Stir the flour, baking soda, salt, cinnamon and sugar together in a small bowl. Set aside. Stir the oil, vinegar, almond extract and all but 2 tablespoons (per cake) of the coconut into the bran mixture. Add the flour mixture. Stir to combine thoroughly. Pour the batter into a greased 8-inch square baking pan(s). Sprinkle the reserved coconut on top. Bake for about 25 minutes or until a tester inserted in the center comes out clean. Serve warm or at room temperature. |
