Preparation:
Cream butter and sugar, add eggs, one at a time, beat good after each egg. Mix baking powder and cracker crumbs then add to eggs, butter and sugar. Mix good. Add pecans, coconut and flavoring. Put in two 9" greased and floured pans. Bake at 350~F. for 35 minutes, cool before adding icing. ICING: 1 stick butter, 1 box confectioners sugar, 1 small can crushed pineapple, drained. Cream butter, sugar good. Add pineapple, put on cooled cake. |
