Sally Lunn Teacake

Ingredients:

1 stick butter
3/4 cup superfine sugar
3 1/2 cups self-rising flour
2 large eggs -- beaten
1 Cup milk -- if necessary
 

Preparation:

Cream the butter and sugar. Add the flour and beaten eggs alternately. Add a little milk if the mixture seems too stiff. Put the mixture into a well greased tin. Bake at 425 degrees for 1 hour. cut wile warm and spread with softened butter.
