Preparation:
Wash heart thoroughly; remove veins and arteries. Rub inside and outside with salt and pepper; fill with favorite seasoned dressing. Sew or skewer; brown in roast pan in hot fat. Add soup, tomato sauce, Worcestershire sauce and garlic; place bay leaf on top. Cover pan. Bake in 300F oven until tender about 3 hours and 20 minutes. Place onions and carrots around heart; bake for 40 minutes longer. Thicken gravy, if desired. Add water, if needed, during baking; remove bay leaf before serving. Serve wtih butter noodles or mashed potatoes. |
