Preparation:
Preheat oven to 350 degrees.
In a skillet over medium high heat, saut‚‚ onions, mushrooms, red pepper, and garlic in oil until tender, about 3 to 5 minutes. Season with salt and pepper.
Mash tofu in a large bowl. Add oats, spinach, and seasonings. Mix well.
Shape into 12 patties and place on nonstick baking sheet.
Bake for 20 minutes; flip and bake an additional 10 to 15 minutes.
Serve on bun or roll or in pita. Spread with mayonnaise or mustard, if desired. Garnish with lettuce and tomato.
