Preparation:
Preheat oven to 350 F. Slice bread in half lengthwise. Remove soft bread center; reserve for another use. Spread mustard evenly inside bread shells. Heat oil in large non-stick skillet over medium heat. Add onion; cook 4 minutes. Add bell peppers; cook 4 minutes or until peppers are tender, stirring occasionally. Add salami; cook until heated through. Add eggs; increase heat to medium-high. Cook, stirring until eggs are set. Season with salt and pepper to taste.
Fill bread shells with salami mixture. Close sandwich; wrap tightly in aluminum foil. Bake 20 minutes or until heated through. Cut sandwich crosswise into 6 slices. |
