Preparation:
Peel and devein shrimp if using. Mix oil, lime juice, fajita seasoning, and meat, and marinate for 4 hours. Drain meat and reserve marinade. In a heavy fry pan, heat on high 3 tbs marinade. Add peppers and onions, saute for 2 minutes. Remove to platter. Add 1 tbs of marinade to pan. Add meat, stirring for 3 minutes or until cooked. Remove meat to platter. Pour remaining marinade into pan, cook for 1 minute. Pour over meat and peppers. Add cilantro and toss. Serve with cheese in tortillas. |
