Preparation:
Combine 1/2 cup oil and 1 cup water in a saucepan; bring to a boil. Remove from the heat and add the matzah meal, salt and basil all at once. Stir well with a wooden spoon. Preheat oven to 375 degrees. Mix eggs and 1/2 half of the garlic into the matzah mixture. Shape into an oval loaf. Place on an imgreased cookie sheet and bake 40-50 minutes or until the top is golden brown. Remove from the cookie sheet and let cool 10 minutes on a rack. Split the loaf in half lengthwise. Mix the remaining garlic with the remaining 2 tbsp of oil. Spread over the loaf halves and toast under the broiler. Cut into 12 slices and serve immediately.
Herb Bread Variation
You will need 3 tbspo of mixed herbs. Mix 2 tbsp of the mixed herbs into the dough. Rather than spreading garlic on the bread before toasting, sprinkle with the remaining tbsp of herbs mixed with the 2 tbsp of oil. |
