Preparation:
Preheat oven to 350 degrees
In large bowl, beat sugar and margarine until light and fluffy. Beat in
eggs and lemon peel.
Process bananas in blender; measure out 1 cup.
In small bowl, combine flour, baking powder, salt and cinnamon. Add flour
mixture to egg mixture alternately with processed bananas, ending with
flour mixture. Stir in poppy seeds. Spoon into greased 9x5-inch loaf pan.
Bake in preheated oven 60 to 70 minutes until wooded pick inserted in
center comes out clean. Cool slightly in pan. Invert onto wire rack to cool
completely. Makes one loaf. |
