Preparation:
Cooking times are based on quantities for 4 servings and the use of a standard (500-625 Watt) microwave oven, adjust as required. Place the broccoli in a shallow (10"x6") baking dish. Cover with vented plastic wrap. Microwave at HIGH for 4 to 5 minutes. Break the broccoli up with a fork. Recover. Microwave at HIGH until the broccoli is just tender (2-3 minutes longer). Drain well. Crack the eggs into a medium size mixing bowl. Add the milk, basil, salt and pepper. Beat well. Stir in the cheese, mushrooms and green onions. Pour over the broccoli. Cover loosely. Microwave at MEDIUM-HIGH for 8 to 11 minutes, stirring gently every 4 minutes. Sprinkle with paprika. Let stand, covered, for 3 minutes. Serve. |
