Preparation:
Boil zucchini 4 minutes in water, cut into halves lengthwise, scoop out pulp and save. Mix together pulp from zucchini, bread, salt, pepper, oregano, cream, egg yolk, cheese, prosciutto and mushrooms. Place Zucchini halves in greased baking dish and fill each zucchini half with some of the prepared mixture. Sprinkle with olive oil, brush with beaten egg and a little salt. Bake in moderate oven (375) for 30 minutes. |
