Preparation:
Saute cabbage and onion in 1 Tablespoon of butter and 1 Tablespoon of Olive Oil.
1/2 can of any good corned beef, the meat, not mix of potatoes, I freeze the ramaining meat in foil.
Break this up and stir into the cooked cabbage and onion. You may correct the seasonings, but be very careful as the corned beef is salty.
This is particularly good using the Corned Beef that has jalapeno peppers already in it. Or char, peel and seed your own jalapenos and add to the mix. Good winter lunch. |
