Preparation:
1. Soften gelatin in a small bowl with the cold water. 2. In a blender, combine 1 cup of the milk with the crystallized ginger and blend for 30 seconds or until will combined. 3. Place gelatin/water mixture in a pan of hot water to dissolve gelatin. 4. Combine all ingredients in a stainless steel bowl and pour into an ice cream maker. 5. Process in ice cream maker until desired consistency is attained. 6. Serve with a cookie and a sprig of mint
