A great alternative to a regular hamburger for those who are trying to eat light or vegetarian. |

Ingredients:

portobello mushrooms |

sundried tomatoes, reconstituted, sliced |

red pepper, thinly sliced |

garlic |

onion powder |

shallot, minced |

olive oil |

sherry |

goat cheese |

Kaiser rolls or large hamburger rolls |

Preparation:
Heat olive oil in small skillet. Saute shallot and garlic in oil until fragrant. Add sundried tomatoes, red peppers and onion powder. Cook until starting to soften. Add sherry, cook until sherry has evaporated. Brush mushrooms with olive oil. Crumble cheese over mushrooms, top with pepper mixture. Bake at 425 for 5-7 minutes. |
