Preparation:
* use onion and garlic flavored diced tomatoes
Season fillets with salt and pepper and brown in olive oil. Remove fillets and suate onion and garlic. Add tomatoes and liquid to skillet along with mushrooms, wine and seasonings. Add fillets, cover and simmer over medium to low heat for 20 minutes. Prepare rise according to package, then stir in Parmesan cheese and parsley. Serve duck and sauce over rice. |
