Preparation:
Brown the beef over low heat, do not over cook. Break up the meat in to small pieces.
When brown drain the fat. Add the refried beans and mush up the whole beans into the mixture creating a smooth texture.
Add the salt, Chili powder, and Taco Sauce to the mixture.
Remove from the heat.
Using a second skillet fill with 1/4 inch of oil and heat until hot. Take a small peice of tortilla
to test oil for heat. When dropped into the oil the tortilla should bubble. On each corn tortilla
spread 1/2 of the beef mixture on the center of the tortilla. Fold the tortilla in half and press. The
beef mixture will stick the sides of the tortillas together. Place each taco into the pan of hot oil and
fry both sides until crispt. Remove the tacos from the pan and place them on something to drain until
they cool slightly. Open the taco slightly and add a slice of American cheese and lettuce. Taco can be
topped with additional taco sauce if desired. |
